Product Classification Guide
The International Dysphagia Diet Standardisation Initiative (IDDSI) is a globally recognized framework used to classify foods and drinks for individuals with swallowing difficulties (dysphagia). The IDDSI framework provides clear, standardized levels to promote safety and consistency when selecting appropriate food and beverage options for patients and residents.
The IDDSI framework includes defined food and drink categories, referred to as Levels, which describe texture and consistency characteristics. Providing foods at specific IDDSI Levels may help reduce the risk of choking or aspiration for individuals with dysphagia (swallowing difficulties). It is important to note that the IDDSI framework classifies food and beverage textures only. It does not determine which IDDSI Level is appropriate for an individual. IDDSI recommends that Level selection be determined in collaboration with a qualified healthcare professional trained in dysphagia management and IDDSI implementation.

Our Testing Process
All Maple Leaf Foods products included in this guide were tested using the official IDDSI testing methods. Testing was conducted by third-party Registered Dietitians (RDs) following food safety best practices within the Maple Leaf Foods test kitchen.
Time and temperature can impact IDDSI texture outcomes. In general, colder temperatures may result in thicker and/or stickier textures, which can affect IDDSI classification.
