Method

  1. Cut the deli roast beef into julienne strips. Cover with wrap. CCP-Maintain <40'F/4'C until ready to assemble salad.
  2. Wash, dry and chop the romaine lettuce and place in a large bowl.
  3. Wash and prepare the red peppers, and English cucumbers; julienne into strips and add to the romaine lettuce. Also add the julienne carrot strips to the bowl.
  4. Right before service, add the salad dressing to the bowl and toss the salad mixture.
  5. At the point of service, place the lettuce mixture at the bottom of each plate/bowl. Place 48 g/1.7 oz sliced roast beef in the centre of the salad. Serve immediately.
