Method

  1. Two days before, thaw the cooked beef steak strips in the refrigerator at < 4°C/60°F.
  2. In a small bowl, whisk together Korean style sauce, and honey; and set aside.
  3. In a large skillet, heat sesame oil and add the minced garlic and stir until fragrant; then sauté carrots, and broccoli. Cook for approximately 5 to 10 minutes or until softened. Add the cooked, shaved steak to the vegetable mixture and pour the sauce over the ingredients. CCP-cook to an internal temperature of 165°F/74°C held for at least 15 seconds.
  4. At the point of service, serve 175 mL/6 ounces per serving. Garnish with chopped green onions. CCP-maintain: product held at above 140°F/60°C. Temperature should be taken every two hours during holding.
  5. Discard unused product.
