Method

  1. Preheat the convection oven to 400F/200C.
  2. Place cooked breaded chicken cutlets (87 g each) on a parchment-lined baking sheet. Bake for 8 minutes and then flip the cutlet and bake for 8 minutes more. Ensure an internal cooking temperature of 165F/74C is reached for a minimum of 15 seconds.
  3. Meanwhile, while the chicken is baking, heat oil in a skillet on medium-high heat. Saute sliced mushrooms until tender for about 2-4 minutes. Remove from heat.
  4. Remove the baking sheet with chicken cutlets from the oven and sprinkle with shredded cheddar & jack cheese. Top with mushrooms, bacon chips, and chopped green onion. Place chicken with toppings back in the oven and heat for 3-4 minutes until the cheese is melted. Serve immediately.
