Pork Rib’its with Berry Sauce

Method
- In a pot, heat mixed berries, cherries (or cranberries), sugar, and lemon juice to a simmer. Cook for 15 minutes – taste for a balance between sweetness and sour – the desire is not too sweet using the cherries to balance some sour.
- Mix water and cornstarch to form a slurry and add very slowly to the sauce to thicken to the desired consistency.
- In a pre-heated 350 F (175C) oven and on baking sheets, heat the pork Rib'its until they are hot and starting to crisp slightly/brown further 160 F/ 70 C.
- Drizzle the berry sauce over the Pork Rib'its and cook for another 10 minutes. Remove from oven and serve a portion of pork with 30 mL of sauce over the top.
