Method

  1. Preheat convection or combi oven to roast at 350 F. Defrost diced turkey fully so that seasonings stick and cook better on the turkey when fully defrosted.
  2. In a large bowl, combine the lemon juice, canola oil, mustard, chili powder, paprika, garlic, tomato sauce and balsamic vinegar. Mix with a whisk to combine. Add turkey to bowl and allow to marinate for 20 minutes.
  3. Lay out the seasoned diced turkey on parchment lined baking sheets, roast in the oven for 10-15 minutes, depending on the heat in the oven. Ensure the turkey reaches an internal temperature of 165 F (74 C) prior to service.
