Method
- The day before, thaw the cooked chicken souvlaki pieces in the refrigerator at 4°C/40°F or lower.
- Wash and cut peppers and red onions into rough triangle cut 1" pieces similar to the chicken thigh piece size.
- Sauté peppers, onions and black olives along with the thawed chicken pieces until vegetables are cooked and chicken is above 165°F/74°C.
- Cook basmati rice in water, following package directions.
- Serve on a bed of basmati rice (approx. 85 g) covered with a serving of the chicken mixture (approx. 183 gm or 6 ounces). Garnish with crumbled feta cheese (10 mL) over the top of the dish and finish with a serving of tzatziki sauce (10 mL).
- Alternately, cook basmati rice in chicken stock (Nutritional analysis will be different.)
