Recipe Information

Method

  1. The day before, thaw the cooked chicken souvlaki pieces in the refrigerator at 4°C/40°F or lower.
  2. Wash and cut peppers and red onions into rough triangle cut 1" pieces similar to the chicken thigh piece size.
  3. Sauté peppers, onions and black olives along with the thawed chicken pieces until vegetables are cooked and chicken is above 165°F/74°C.
  4. Cook basmati rice in water, following package directions.
  5. Serve on a bed of basmati rice (approx. 85 g) covered with a serving of the chicken mixture (approx. 183 gm or 6 ounces). Garnish with crumbled feta cheese (10 mL) over the top of the dish and finish with a serving of tzatziki sauce (10 mL).
  6. Alternately, cook basmati rice in chicken stock (Nutritional analysis will be different.)
