Method

  1. Slice sure slice turkey breast and mozzarella cheese into thin strips. Chill under refrigeration at <40'F/4'C until ready to assemble salad.
  2. Drain green stuffed olives. In a large bowl, combine spring mix salad, halved grape tomatoes, diced yellow sweet peppers and chopped red onions. Chill under refrigeration < 40'F/4'C until point of service when assembling the salad.
  3. Prepare salad dressing or use prepared balsamic vinaigrette dressing which will be higher in sodium. In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, black pepper, salt and basil leaves. Set aside.
  4. Pour dressing over salad and toss to coat. At point of service, place 250 mls/1 cup of mixed salad on plate. Place 58 grams of turkey breast strips and 30 grams of mozzarella strips on top. Serve immediately.
