Recipe Information

Method

  1. Ensure that the sausages are defrosted fully. Use whole or cut-up into pieces (your choice).
  2. In a heavy-bottomed pot over medium heat, add oil and when hot saute onions and peppers for 5-8 minutes, stirring occasionally.
  3. Add the sausage, tomatoes, potatoes, chicken broth, water, paprika, black pepper and garlic. Bring to a boil and then turn down to a simmer. Cook for 45-55 minutes.
  4. Thicken stew with a cornstarch slurry. Ensure that the stew has reached an internal temperature of 165 F (74 C). Serve hot with accompaniments.
