Recipe Information

Method

  1. Cut the boneless toupie ham into 3/4 inch pieces. Hold at <40'F/4'C until later step.
  2. Heat oils in a large skillet over medium heat. Add sweet potatoes, onion, red pepper, and ginger; cook and stir for ~ 5 minutes. Add water and reduce heat to low; cook uncovered until potatoes are tender. Cook for ~8-10 minutes stirring occasionally.
  3. Stir in the drained, pineapple tidbits, verde salsa, and soya sauce. Cook over medium-high heat until heated through for about 10 minutes. Ensure internal temperature reaches 165'F/74'C held for at least 15 seconds.
  4. Garnish with chopped cilantro.
