Method

  1. Preheat convection oven to 350'F/177'C. Place frozen chicken tenders on parchment-lined baking sheet. Bake for ~20 minutes; turn after 10 minutes to ensure even browning on all sides. Cook to an internal temperature of 165'F/74'C held for 1t least 15 seconds. Slice chicken tenders into thin strips to place on salad at point of service. Chill.
  2. Place romaine lettuce in large bowl and toss with dressing.
  3. Portion 250 mls of salad on each plate and top with 80 grams of chilled, sliced chicken tenders. Garnish with 15 ml croutons, 5 ml parmesan cheese and 5 g crumbled bacon. Serve immediately or cover and chill until service.
