Method

  1. The day before, thaw cooked natural chicken under refrigeration at <4'C/40'F.
  2. Place the thawed chicken in a large bowl and shred with a fork.
  3. Add the shredded coleslaw mix containing green cabbage, red cabbage and carrots. Add the finely chopped white onions, red bell peppers and cilantro.
  4. Add the lime juice and the sesame ginger dressing; stir with a spoon. Cover with plastic wrap and chill under refrigeration to allow the flavours to blend.
  5. At point of service, place #6 scoop (175 mls/6 oz) prepared chicken slaw on a leaf of lettuce.
