Method

  1. Heat oil in a large saucepan set over high heat; cook chicken and mushrooms for 8-10 minutes or until browned. Remove from heat and drain all liquid. Add mushroom and onion bisque, broccoli, peas, salt, pepper and garlic powder. Pour into shallow hotel pans and bake chicken casserole in a pre-heated 375 F convection oven and cook chicken to an internal temperature of 165 F (74 C). Cook until sauce is thickened.
  2. Meanwhile, combine mozzarella cheese, breadcrumbs, Parmesan cheese and melted margarine in a bowl. Sprinkle evenly over the chicken mixture in the hotel pans, bake another 15 minutes or until golden brown. Serve hot.
