Recipe Information

Method

  1. Cook macaroni: stir macaroni into boiling, salted water; cook 10-12 minutes or until tender, stirring occasionally. Drain well. Pour into greased 2" deep insert pan(s).
  2. In a large saucepan over medium heat, melt first portion of margarine. Whisk in flour and cook for 1 minute. Add milk gradually, whisking constantly to keep from lumping. Cook until the mixture is thick and bubbly for about 3-5 minutes.
  3. Season with salt, pepper and nutmeg.
  4. Add in 3/4 of the cheddar and swiss cheese and stir until melted. Pour cheese sauce over macaroni and mix well. Add in diced ham and stir. Top with remaining 1/4 of the shredded cheese.
  5. In a small bowl, combine bread crumbs and second portion of melted margarine. Sprinkle over macaroni and cheese.
  6. Bake with no lid in preheated convection oven at 176'C/350'F for ~ 25-30 minutes or until internal temperature reaches 71'C/160'F held for a min. of 15 seconds.
