Recipe Information

Method

  1. Slice the ham into thin slices on meat slicer and place in an insert pan. Cover with lid/wrap. CCP-maintain <40°F/4°C until ready to assemble sandwich.
  2. Under cool running water, prepare produce. Slice tomatoes using meat slicer. Prepare lettuce leaves and set aside until later step. CCP-Maintain < 40°F/4°C until ready to use.
  3. Prepare honey sauce for sandwiches. In a small bowl, whisk together, mayonnaise, Dijon, mustard, honey, paprika, and cayenne pepper. Cover with wrap. CCP-Maintain < 40°F/4°C until ready to use.
  4. To assemble sandwich: cut croissant in length wise, spread 5 mL/1 tsp of honey sauce on each side of the sandwich. Place lettuce leaf (10 g) on the bottom of the bun, followed by tomato slices (75 g) then to half slices (20 g) of Swiss cheese, and top with ham (50 g). Served immediately or wrap. CCP-Maintain < 40°F/4°C until ready to use.
  5. At the point of service, cut the sandwich in half.
