Method

  1. Place the ham in a parchment lined roasting pan with a little water. Cover and cook in pre-heated 300 F oven for 2 hours.
  2. In a medium pot, add the brown sugar, pineapple juice, Dijon mustard, honey and orange juice. Bring to a boil and allow to simmer for 20 minutes to combine flavours. Score the ham into a diamond pattern and lay the pineapple rings over the top of the ham, inserting two cloves into each ring to hold them in place. Generously brush or pour the glaze over the ham; return to the oven for 30 minutes. Brush repeated times for desired effect.
  3. Heat the ham to an internal temperature of 165 F (74 C). Slice and serve with sauce.

Garnish each serving with a 1/2 sliced of pineapple ring (taken off the ham) on top of each sliced ham with glaze. Serve with scalloped potatoes and green vegetables (not included in nutritional analysis).
