Method

  1. In a large pot, heat the oil and saute onions, celery, garlic and red peppers until tender. Add canned tomatoes and tomato paste. Simmer for 30 minutes.
  2. Add beef ribettes, salt, pepper and oregano, simmer for another 20-30 minutes.
  3. Serve hot with accompaniments.
